In Mexico City, the kebab is more distinctly adapted to the local cuisine. Instead of pita, the meat is sliced very thin and served in corn tortillas – this is what they called the ‘shepherd taco’, or ‘taco al pastor’, distinguished from the more Mediterranean variation. Al pastor tacos are served with pineapple, cilantro, red or green salsa, and annatto sauce – a delicious peppery concoction made from the seeds of tropical achiote trees.

Some states in the north of Mexico, like Durango, Chihuahua, and Nuevo Leon, will serve the sliced meat on maize flour tortillas to create ‘tacos de trompo’, and if wheat tortillas are used they will be called ‘gringas’.
